I remembered an episode were Anthony Bourdain was eating like well prepared marrow from cow (you know the bone) and we have many dishes like that in the Philippines. Never really did like papaitan but batangas goto (with the giblets, not the porridge) is EXCELLENT. Find a reputable place where they prepare meat stew there too and it is WONDERFUL.
